Chickpea Croquettes

This recipe has been a favorite of ours for some time now. Turn these croquettes into "burgers" and serve them on a bun, or eat as is over a bed of field greens. 


Chickpea Croquettes

1 cup whole wheat flour
3/4 cup hot water
juice of 1/2 a lemon
1 1/2 teaspoons salt
2 teaspoons cumin
1 cup dried chickpeas, soaked and cooked (or 15 oz can rinsed and drained)
4 chopped green onions
1/2 a red pepper, chopped
1 jalapeno, minced
3 cloves garlic, minced
2 tablespoons cilantro, minced
3 tablespoons olive oil

Directions:
1. In a bowl mix the water, whole wheat flour, lemon juice, cumin, and salt.  Stir in the chickpeas, scallions, red pepper, jalapeno, garlic, and cilantro.


2. Heat the olive oil over medium heat in a large saucepan.  With your fingers, or an ice cream scoop, form the mixture into 8 patties, about 1/2 inch thick. Place in the pan and cook 4 to 5 minutes per side.


Serve with homemade salsa, avocado or sour cream.

  3. Thanks for catching my mistake KD! The whole wheat flour gets mixed in with the water and lemon juice. The recipe has been fixed. :)
